Italian Stuffed Meatloaf

Ingredients
- 1 lb ground beef
- 2 ea Italian sausages, sweet or hot, casings removed
- 1/2 onion, chopped
- 2 cl garlic. minced
- 2 eggs
- 1 C ricotta cheese
- 8 oz mozzarella cheese, grated
- 2 T parmesan cheese, grated
- 2 T dried oregano
- 2 T dried basil
- 2 T dried parsley
- 12 ea fresh basil leaves (sliced)
- 8 ea small redskin potatoes, chopped bite-size
Instructions
- Saute the onion and garlic in oil until translucent, remove from heat, then mix together with the ground beef, sausage, 1 egg, and 1 T each of the dried oregano, basil and parsley. Season to taste.
- Spread the meat mixture on waxed paper and roll flat to 3/8-inch thick. A sheet of wax paper on top will help. Width should be the width of your baking dish, length to whatever comes out.
- Mix together the cheeses and the remaining egg, oregano, dried basil and parsley. Season to taste, then spread the cheese mixture evenly on the meat. Distribute the sliced basil leaves on the cheese
- Use the waxed paper to roll the meat and cheese up like a jelly roll, place the loaf in a pyrex baking dish, and put the potatoes alongside the loaf. Bake for 1 hour at 350.
- Plate and serve.
